What? ANOTHER blog entry on Brasserie Les Saveurs?

Yes, folks, this will be my FIFTH blog entry for this French dining establishment at St. Regis Singapore.

Though, to be fair, even the most ‘recent’ entry of Brasserie Les Saveurs (Sunday Brunch entry) was in January 2021, so it’s been 1.5 years since then.

For this blog entry, the husband and I made THREE visitations and had lunch here on three separate occasions.

The atmosphere overall is insanely elegant and romantic. St. Regis is my favourite go-to hotel in Singapore. It’s just the place for when you want something REALLY SPECIAL. I’ve dined at the restaurants on-site before, and done TWO staycations here. My other reviews are here:

For one of my visitations, this was my bag of the day. Lol.

American Express Love Dining

As usual, we are here partly because of the American Express Love Dining programme. It gives diners a 50% discount when two adults dine in, 33% when three adults dine, 25% when four adults dine, and 20% off when there are five or more people. 

Basically, one person gets to eat literally free.

There’s a number of American Express credit cards that provide Love Dining privileges. Namely, the Platinum Credit Card, the Platinum Reserve Credit Card, and the Platinum Charge card. My personal favourite is the Platinum Charge card (I’ve written about the list of benefits here), thanks to a whole host of other perks that it offers.

Brasserie Les Saveurs: à la carte lunch menu

The lunch menu has a wonderful selection of cold and hot appetisers, exquisite mains (plat principaux), and French desserts.

For those who are keen on using American Express Love Dining benefits, the criteria is that at least one MAIN dish per person must be ordered (e.g. if you have two adults, order two main dishes to get the 50% off the entire food bill).

Mains are (i) anything from the Plat Principaux section or (ii) main dishes from the Vegetarian Menu (there is one – check with the server for details if unsure!)

While looking through the menu, servers typically will bring out a warm bread basket of sourdough loaf and butter.

The cold starter options look almost too beautiful to eat.

Tartare de Seriole

Tartare de Seriole – a perfect circle of raw yellow amberjack, lime zest, vanilla oil, mango, and micro basil.

So light, so fresh – the mango bits lifted the slight oiliness of amberjack fish. followed by the aftertaste of citrusy lime.

For something more different, the Salade de Poulpe (Octopus salad) is a unique option.

Salade de Poulpe (Octopus Salad)

A medley of charred octopus, hummus, cherry tomato confit, paprika oil, and baby salad, it’s like there was a perpetual taste of the ocean. The surrounding ingredients absorbed the octopus’ goodness, rendering it all with a touch of smoked seafood.

Where do we even start?

Escargots de Bourgogne

People tend to be divided about snails; either they see it as a French delicacy, or the image of slimey garden snails crawling out after the rain remais stuck in their heads.

Whatever it is, the Escargots de Bourgogne – Baked snails, garlic parsley butter, bread crumbs, green salad – is surprisingly good. The richness of garlic butter brings out the escargots’ softness and gives character to the salad.

Those craving for a much richer or heavier kind of starter can try the Foie Gras De Canard Poele. A beautifully seared goose liver is paired with grapes, pistachio, port wine reduction, and micro greens.

Velvety rich and greasy. the fruits wine sauce tones the grease a little, letting the Foie Gras remain a melt-in-your-mouth satisfaction. It could have been an acquired taste however, so for newbies to Foie Gras I would recommend sharing this dish with someone.

However, if you’re terrified of the typical French entrées seen so far (raw fish, octopus, snails, goose liver… you get the idea), a more fail-safe option is the Bisque de Homard.

Bisque de Homard

Basically a lobster bisque topped with pieces of floating lobster ravioli and herbs, the server will first bring the plate and empty the bisque’s contents in it. 

This soup is extremely rich. Pair it with the bread basket for maximum satisfaction. 

Plat Principaux: Mains

One plus point for the menu so far: there’s a decent variety of seafood options, and the mains do not disappoint.

Noix de St. Jacques d’Hokkaido

Resembling more like a beautiful garden or flower bed than an actual meal, the Noix de St. Jacques d’Hokkaido is an exquisite arrangement of Hokkaido scallops, leek, cauliflower, and topped with parmesan emulsion.

This was super flavourful; it’s like the cauliflower and leek took on the grilled flavours, adding on to the already succulent and sweet scallops. Wow.

The Baramundi a la Vapeur is as delightfully complex.

A firm but buttery tasting fish is steamed and prepared with fennel, zucchini, broccolini, clam veloute and green oil.
Alternatively, one can’t go wrong with the lovely non-seafood choices. Such as the Porc Iberic: Iberico pork loin is served with baby carrots, carrot puree, orange, and honey apple jus. The pork slices here are unbelievably tender and soft – it’s literally zero toughness.

On one of my visits, we tried the Steak Frites, and it was as rich as it was good.

Steak Frites

Go for this if you’re craving for a huge chunk of meat – the serving isn’t small; it’s a 300g grilled Australian Ribeye with homemade French fries and a side of bearnaise sauce.

Pro tip: request for chilli flakes – gets that extra oopmh!

While it’s not like the exceptional kind of steaks that you can find at W Hotel’s SKIRT, the Steak Frites here are very satisfying. Juicy and tender, with a significant amount of marbled fat, the distinctive moist beef is very easy to chew.

Vegetarian Mains

Note: the Vegetarian menu is a separate menu from the main one at Brasserie Les Saveurs, and very easy to miss – especially if viewing via QR code scan / mobile browser. 

But it’s worth taking a look – the food items here are very well-made, and not just an after thought.

Pizza Magherita

You know it’s a great place when they do a simple dish such as Pizza Magherita well. Mozzarella cheese, tomato sauce, and oregano herbs came together on a crust that was enjoyably chewy.

Tofu Burger

The Tofu Burger is really, REALLY awesome – I will recommed it even to my non-vegetarian friends. A crispy fried Tofu patty – crunchy on the outside and tender on the inside, comes with beetroot and pickles in a hamburger bun. I have never had a Tofu Burger this literally or this wonderful before. 

Don’t be fooled by its looks – combined with the potato wedges, the serving is huge and it is really filling!

The vegetarian menu has several tempting pasta options, but the only one I’ve tried so far is the Ravioles de Royan

Spinach and cheese ravioli, mushrooms and green asparagus are tossed in truffle cream sauce. The hint of truffle is really obvious. Who wouldn’t enjoy a truffle-infused cream of pasta?

Dessert

At Brasserie Les Saveurs, desserts are a Must-Have.

Tarte fine aux Pommes

Tarte fine aux Pommes – a round tart of sliced apples, puff pastry, and vanilla ice cream. The ice cream is as good a quality as the apple tart – you can taste the goodness of vanilla beans against the aroma of baked apples.

And there is the Tarte au Chocolat – an indulgent combination of Guanaja 70% dark chocolate, chocolate almond sponge, and chocolate coulis. Velvety rich and chocolatey – need I say more?

Not to be outdone is the Choux a la Noisette. The best kind of nutty is going on in here:  hazelnut choux, praline diplomat cream, Guandaja chocolate, and pear coulis.

What is a French restaurant without Creme Brulee? At Brasserie Les Saveurs, the Brulee here is laced with Vanilla-Bourbon and the top torched after being sprinkled with brown sugar. Caramelized on the top, creamy on the bottom – this is one of the best ways to end a meal.
