Brasserie Les Saveurs: a perennial favourite
What? ANOTHER blog entry on Brasserie Les Saveurs?
Yes, folks, this will be my FIFTH blog entry for this French dining establishment at St. Regis Singapore.

Though, to be fair, even the most ‘recent’ entry of Brasserie Les Saveurs (Sunday Brunch entry) was in January 2021, so it’s been 1.5 years since then.
For this blog entry, the husband and I made THREE visitations and had lunch here on three separate occasions.
St. Regis Singapore
Brasserie Les Saveurs is located on the main floor of St. Regis Singapore.

The atmosphere overall is insanely elegant and romantic. St. Regis is my favourite go-to hotel in Singapore. It’s just the place for when you want something REALLY SPECIAL. I’ve dined at the restaurants on-site before, and done TWO staycations here. My other reviews are here:

For one of my visitations, this was my bag of the day. Lol.
American Express Love Dining
As usual, we are here partly because of the American Express Love Dining programme. It gives diners a 50% discount when two adults dine in, 33% when three adults dine, 25% when four adults dine, and 20% off when there are five or more people.
Basically, one person gets to eat literally free.
There’s a number of American Express credit cards that provide Love Dining privileges. Namely, the Platinum Credit Card, the Platinum Reserve Credit Card, and the Platinum Charge card. My personal favourite is the Platinum Charge card (I’ve written about the list of benefits here), thanks to a whole host of other perks that it offers.

Brasserie Les Saveurs: à la carte lunch menu
The lunch menu has a wonderful selection of cold and hot appetisers, exquisite mains (plat principaux), and French desserts.

Mains are (i) anything from the Plat Principaux section or (ii) main dishes from the Vegetarian Menu (there is one – check with the server for details if unsure!)
While looking through the menu, servers typically will bring out a warm bread basket of sourdough loaf and butter.

Entrées Froides: Cold Starters
The cold starter options look almost too beautiful to eat.
Tartare de Seriole
So light, so fresh – the mango bits lifted the slight oiliness of amberjack fish. followed by the aftertaste of citrusy lime.

Where do we even start?
Escargots de Bourgogne
Whatever it is, the Escargots de Bourgogne – Baked snails, garlic parsley butter, bread crumbs, green salad – is surprisingly good. The richness of garlic butter brings out the escargots’ softness and gives character to the salad.

Velvety rich and greasy. the fruits wine sauce tones the grease a little, letting the Foie Gras remain a melt-in-your-mouth satisfaction. It could have been an acquired taste however, so for newbies to Foie Gras I would recommend sharing this dish with someone.

This soup is extremely rich. Pair it with the bread basket for maximum satisfaction.
Plat Principaux: Mains
One plus point for the menu so far: there’s a decent variety of seafood options, and the mains do not disappoint.
Noix de St. Jacques d’Hokkaido
Resembling more like a beautiful garden or flower bed than an actual meal, the Noix de St. Jacques d’Hokkaido is an exquisite arrangement of Hokkaido scallops, leek, cauliflower, and topped with parmesan emulsion.
This was super flavourful; it’s like the cauliflower and leek took on the grilled flavours, adding on to the already succulent and sweet scallops. Wow.

Vegetarian Mains
Note: the Vegetarian menu is a separate menu from the main one at Brasserie Les Saveurs, and very easy to miss – especially if viewing via QR code scan / mobile browser.
But it’s worth taking a look – the food items here are very well-made, and not just an after thought.

Don’t be fooled by its looks – combined with the potato wedges, the serving is huge and it is really filling!

And there is the Tarte au Chocolat – an indulgent combination of Guanaja 70% dark chocolate, chocolate almond sponge, and chocolate coulis. Velvety rich and chocolatey – need I say more?

Not to be outdone is the Choux a la Noisette. The best kind of nutty is going on in here: hazelnut choux, praline diplomat cream, Guandaja chocolate, and pear coulis.
