This is my Brasserie Les Saveurs review. All food items featured in this post are from two separate visitations to the French dining establishment.
Brasserie Les Saveurs review: St. Regis Singapore
When I wrote this Brasserie Les Saveurs review, I should *almost* put a disclaimer. Honestly, my feelings about this place – or any other restaurants within the premises of St. Regis Singapore – is hands down, positively biased.
This place has given my family, friends and myself so many good memories – from the excellent seafood dinner buffet experience in 2019, to the Epicurean lunch set meal in March 2020, and even the Afternoon Tea!
Having dined here multiple times, it’s our favourite place for elegant dining. Romantic set up, wonderful cuisine, and impeccable service – I’ve never been disappointed at St. Regis, and I recommend them fully without reservation. (I’ve also done a family staycation there, and it’s the best staycation I’ve ever had in Singapore).
Bonus: as these restaurants within the hotel participate in the American Express Love Dining programme, one can snag up to 50% discount when dining here. I particulary recommend the AMEX Platinum Charge Card – not just for this but a huge range of other lifestyle benefits as well.

Restaurant – for a perfect romantic dinner
Set with high ceilings, chandeliers, dim lighting, and comfortable seats with plush pillows, the soft romantic hues set the stage for a relaxing and cosy evening.
Romantic mood aside – at the time of visitation, it was literally the first week that Singapore had emerged from lockdown/circuit breaker, and eating out was finally allowed. We came here for my husband to celebrate (a slightly delayed) Father’s Day.

(And… loved it so much that we came back less than two weeks later to dine again. Lol)
Menu
The cuisine here aims to give a ‘Connoisseur Experience’. Patrons can savour a decadent French dining experience with an à la carte menu comprising moreish appetisers, classic mains, indulgent sharing platters and delectable sweet creations.

To cater to children, there is a child menu. Presented in the form of a colouring sheet (with crayons, of course), our three year old immediately got very busy – a great touch for families with young children.
Brasserie Les Saveurs – Child Menu
Food – Starters/Appetizers
We were served complimentary warm sourdough bread, together with a few cheesy puffs.
Complimentary Sourdough Bread Basket – so warm and fragrant when paired with butter. How do you NOT stop eating?
Honestly, with these slightly salty goodies sitting right in front of you… filled with melted cheese… it’s so easy to fill up on carbohydrates even before the main dishes arrived!
The server actually recommended a starter to us – Salade de Crab.
Salade de Crabe: Crab Meat, Celeriac Remoulade, Avruga Caviar, Baby Radish, Paprika Mayonnaise
This was more than some fancy sandwich mix of crab meat and mayonaiise. The textures of raw and slightly bitter vegetables, along with salty and rich caviar, became a lovely medly of seafood goodness. I’m so grateful that this dish was recommended – it’s truly worth a try.
Another appetizer we had tried was the Saumon Fume Maison, a smoked salmon and asparagus dish.
Saumon Fume Maison: Homemade Smoked Salmon, Fresh Herbs, Green Asparagus, Sauce Gribiche
This dish is a little bit more hit and miss – either you love it, or you don’t. It largely depends on your feelings towards asparagus. The vegetable, while fresh, maintained its original taste – it’s kept that way so the flavours of salmon and herbs don’t clash and cleanly come through.
Food – Mains (meat dishes)
Here’s the Brasserie Les Saveurs review of the Main dishes – or in French, Plats Principaux.
The appetizers did place huge expectations for the mains, and St. Regis does live up to those expectations.
For beef lovers, this is not to be missed: the most tender beef cheek ever.
Joue de Boeuf Braisee: Braised Beef Cheek, Pancetta, Mushrooms, Pearl Onions, Carrot, Mashed Potatoes
Run a knife through the meat, and it cuts seamlessly and literally falls apart. The beef cheek, soaking up in the brown sauce, was so wonderfully soft. It was slightly greasy but a good way – luxe collagen richness, that was easily balanced with carrots and mashed potato. Our three-year-old usually struggles with beef (too tough), but with this, when we gave her some to try, she asked for more.
The softest, most tender beef cheek I have ever encountered. 100% recommend
For those who aren’t into beef but are willing to consider lamb, this other dish is a worthy contender: Cotelettes d’Agneau – or ‘Lamb Chop’ in simple English.
Cotelettes d’Agneau: Lamb Chop, Green Vegetables, Button Mushrooms, Rosemary Jus
A mild hint of rosemary permeates through the meat, reducing some of the gaminess usually associated with lamb.
I don’t know how this restaurant does it – but their lamb is also tender and not chewy like a lot of lamb chops you see in other places. While firmer than the beef, the meat also cuts through easily with a knife. I consider this dish a winner as well because it’s hard to find REALLY SOFT lamb – the only other place I can think of that can successfully rival this lamb is the Hot Tapas version at El Theatro Tapas (also has Love Dining benefits!) at the Capitol Kempinski Hotel.
Food – Mains (fish dishes)
Sometimes you see an item on the menu that’s slightly unfamiliar and have to rely on the server’s description to make a decision, and the Legine Australe (toothfish) is one of them. Our server explained that it was a “white fish, like cod. The fish is more rich than cod but we prepare it very light with vegetables“.
Okay, I do love cod, so I was sold.
Legine Australe – Toothfish, Bell Pepper Piperade, Chorizo, Baby Artichokes
The taste was exactly as the waiter said – it was indeed a thicker and slightly more fatty variation of cod. I don’t know if it’s the sauce or other ingredients (think chorizo and artichokes), but the dish had a slight Spanish/Italian feel to it. It’s definitely low-carb as well, so it’s a great option for carb conscious folks.
For those hankering for something more conventional and predictable, there’s always salmon:
Saumon a’ L’unilaterale: Provencal Ratatouille, Rocket Pesto, Cherry Tomatoes
Garnished with ratatouille – a French summer vegetables medly with fragrant green pesto. Overall a lovely pan fried salmon filet.
Child Menu
Asl my very gourmet three-year-old about the food, and her response to everything is, “It’s NICE!”
Yeah, she’s not a picky eater, and generally willing to eat anything served to her, so I am immensely grateful.
Here’s some of the child dishes that she’s tried.
Ravioli in Cream Sauce
I have to say though, we did sample some of the kids’ menu dishes, and the food here is NOT an afterthought, or some miniature version of an adult meal. The ravioli (while smaller than adult size – it’s kids bite sized) indeed felt like a proper well done creamed pasta dish. Same for the chicken wings – well fried and crispy – a discerning adult who wants wings and beer would enjoy this just as much as a non-discerning child.

Desserts
For my Brasserie Les Saveurs review, I will definitely say: save space for dessert. You cannot come here and NOT have dessert.
Creme Brulee: Vanilla Creme Brulee, Caramelized Sugar
I’ve reviewed the Creme Brulee before in my Epicurean set lunch experience at St. Regis, and it’s as consistently good as the first time. Creamy. Custardy. Crispy sugared shell on top. Idiot proof and so easy to love. Yums.
Oh-So-Smooth Custardy Goodness
For those who wish for a more refreshing, lighter kind of dessert, go for something citrusy – Tarte au Citron Meringuee – Lemon Tart.
Tarte au Citron Meringuee: Lemon Cream, Soft Meringue, Yuzu Gel
This dessert is REALLY, REALLY sour – despite the meringue offsetting it’s strength – the Lemon cream flavour still come out rather strongly (in a good way!). I tend to love sour desserts so this was wonderful. The extra dollops of yuzu just makes it even better.

Father’s Day Complimentary Cake
St. Regis always gives complimentary cake if you’re celebrating a special occassion. A flourless, thick chocolate ganache cake layered in between chocolate cream… honestly folks, this cake is a reason in itself to celebrate special occassions here, haha.
Tip for diners – when dining at any of St. Regis’ dining establishments, if there is a birthday or anniversary celebration, let the staff know and you might be given one of these.
Bonus: you can take it home if you can’t finish it at the restaurant.
