Introduction

This is my first review of Prego, an Italian dining establishment at Fairmont hotel, Singapore.

Prego review: Italian restaurant at Fairmont Singapore

Anyways. The hubby and I both love Italian food. Thanks to the American Express Platinum Charge Card, which comes with  Love Dining benefits the two of us get a sweet deal and often dine out together at 50% off.

Generally, the Italian places I’ve visited under the Love Dining benefits have been amazing – including La Brezza at St Regis, and Burlamacco Ristorante. Naturally, trying out the Italian fare at Prego was something that we’d do sooner or later. And finally, here we are!

The Restaurant 

We waited a bit for the receptionist to find our reservation. Meanwhile, our eyes were drawn to the very pretty desserts on display, and available for takeaway. 

Soon we made our way inside. Wide, spacious, with lots of natural light, the space has a slightly rustic feel to it. Herbs, grown within the restaurant itself, line the walls with a a tinge of green; these give green partitions to the seating and interior areas.

That day, we sat near the back of the restaurant, behind the vintage-looking bar counter.

Menu

As expected of an Italian Restaurant, the menu featured traditional Italian appetizers and classics such as Pizza and Pasta.

Food

Complimentary Italian foccacia bread was served alongside an olive oil and balsamic vinegar dip. 

These were truly fragrant – in fact we even asked the server to bring along a second serving of bread. It was THAT good.

Our appetizer to share was the calamari. Deep fried squid rings, tossed in garlic and chilli, served with arugula and a creamy tangy dip.

The calamari leans more towards the chewy side. While it was not rubbery – it was pleasant that it does have a flavourful appeal – i personally prefer my calamari crunchy rather than chewy.

Honestly, the ones I’ve tried at Jamie’s Italian (Forum or Vivocity) or the Pelican (One Fullerton) were more suited to our taste than this one at Prego.

Anyway, onto the mains: Pizza

Salsicca Piccante: Spicy ‘Nduja Sausage, Burrata, Tomatoes.

If you love burrata, this is my recommended go-to.

Rustica: House-made sausage, Pepperoni, Mushrooms, Onions, Capsicums, Tomatoes, Mozerella

A lovely blend of vegetables and cheese, with the occasional slightly sharp tinge of sausage coming in.

Bonus: If you love parmesan cheese – let the server know, and they will bring in a block of parmesan. It’ll be shaved over the pizza, in front of you, and you can have as much of it as you like. 

We found the pizza enjoyable; toppings aside – the crust was unique in that I’ve not encountered something like this in Singapore. With the thickness somewhat in-between a crunchy thin-crust  and a personal pan, it was BOTH slighly chewy with a hint of crunch. 

The Pizza servings were rather large, so while the price is on the higher side – the food is filling and comforting.

Personally, I actually prefer Pizza from other similar Italian dining establishments participating in the Love Dining programme, particularly at La Nonna (Holland Village) or La Brezza (St. Regis Singapore). However, a major selling point of the pizza here – it is VERY, VERY, FILLING.

By the end of our meal, both of us were stuffed and there was plenty of leftovers (I can’t just blame the complimentary bread, lol). But the kind servers are more than happy to pack leftovers in a box for us to take home.
