Prego review
I’m guilty of over-visitation at Prego @ Fairmont Singapore. The Italian fare here is idiot-proof; after being tried-and-tested for how consistently good it is, to date, Prego has been subjected to my blog’s review – including this piece – for a total of THREE entries.

American Express Love Dining
Honestly, a key reason why my family and I keep returning here is – good food aside – the American Express Love Dining benefits, that come with the American Express Platinum Charge Card makes dining in super worth it.
With two adults, the husband I consistently get a sweet, sweet deal of 50% off at participating dining establishments.
If there are 3 adults, the discount becomes 33% off, and if there are 4 adults, the discount becomes 25% – essentially, the way Love Dining works is that one adult gets to dine for free.
In our case, why Love Dining is so attractive – even when we brought along our two children, as they were always young enough to not be included in the headcount, the discount remained at a flat rate of 50% despite us showing up as a family of four (Note: this may change in the near future, our first child is bordering the age of non-free buffets for kids).

Risotto. Pasta. Pizza.
As always, after completing our orderes, complimentary Italian foccacia bread was always brought to our table. Served alongside an olive oil and balsamic vinegar dip, of course.

One of the dishes we’ve ordered before is the Risotto Mascarpone.

The rice, well-coated with a tomato and meat aftertaste, was rich, subtly cheesy, and creamy. Some may find it heavy but it’s hard to not appreciate something so satisfying.

And, there was the Gnocchi Patate. Basically, hand made gnocchi, drenched in a white Gorgonzola cheese sauce. Smooth and creamy.

In one of our visitations, if i recalled correctly, the special of the day, an Eggplant Cannoli, was recommended by the server.

The original Cannoli is carb-based but Prego used eggplant here as a replacement – as such, this isn’t as heavy as a usual Cannoli dish. Yet the cheese and tomato remains intensely rich and flavourful.

Not all rice / pasta dishes come drowing in a cheese or cream sauce. For instance, check out the Hake Leek Ravioli.

Comparatively, this was lighter than most other pasta dishes. Minced hake fish and leek chopped so fine we nearly couldn’t see it – was stuffed into a squid ink pasta shell, and cooked in a rich tomato sauce. The result is a beautifully fishy ravioli dish where flavours burst forth in every bite.

If one really doesn’t know what to order at Prego, and the idea of pasta doesn’t sit well – a go-to is the pizza. ANY pizza.
Gamberetti Pizza
Take the Gamberetti, for instance. Generously topped with shrimp, asparagus, zucchini, tomato, and mozzarella cheese, shrimp lovers will definitely find joy in this.

For a vegetarian option, try the Carciofi.

Decorated with artichokes, red peppers, some pesto sauce, and mozzarella, the slightly sour artichokes stood out against the cheese. My family loved this. Though, be cautioned – artichokes may be a bit of an acquired taste; i find that people usually tend to either love it or hate it.

What’s the closest to a good old cheese pizza? Margherita.
Margherita Pizza
This is the most classical pizza of all. Topped with tomato mozzarella, extra virgin olive oil, and basil leaves – you truly can taste the cheese and pizza dough in this one. Which is great – the dough at Prego is the satisfyingly chewy type.
Also highly popular among children. Just sayin’.

My personal favourite pizza at Prego would be the Porchetta.

This one has a good balance of both meat and vegetables – cherry tomatoes, rucola, shaved parmesan, and porchetta.
Porchetta, by the way, is a savory, fatty, and moist boneless pork roast. So there you go. At Prego, they use pork belly. Yum.

Seriously, try any pizza (that has toppings that doesn’t turn you off). You can’t go wrong there.
Pro-tip: if using Love Dining or other discounts, order extra pizza. Eat 1-2 slices, and request to take the rest home. Prego packs pizza leftover nicely in a nice pizza box for diners to takeaway.
Mains: Fish and Meat
After visiting here so many times, I can say that there are some dishes that’s definitely worth checking out.
For example, the lamb shank.
Stinco di Agnello all Sassarese (Lamb Shank)
Behold, the Stinco di Agnello alla Sassarese: Stewed lamb shank, olives, fennel seeds, green lentils, and semolina cake.
Very rich, but you don’t feel the (disguised) grease thanks to all the lentils around. A bit of a well-hidden calorie bomb. But totally worth it.
Bone in
For seafood, my family absolutely loves the cod.
Merluzzo Bardato al Prosciutto (Cod Fish)
A melt in your mouth cod is the main star of the Merluzzo Bardato al Prosciutto: wrapped in parma ham and served with deep-fried polenta, it almost feels like Fish n Chips, but high-end Italian style.

The cod, while oily and smooth however, does not carry a strong fishy taste.
If one prefers to actually taste fish more strongly, species-wise, Sea Bass might be a better option.
Filetto di Branzino (Sea Bass)
The one here, served with roasted red cabbage leaves, ricotta, and pistachio oil, is truly unique. I find the taste sophisticated, but on the other hand it feels almost too complicated, if that makes sense?
It’s a great dish, and super unique, but on a personal level, I would almost always prefer a simpler pizza over it any day.
Something Fishy
Dessert
In life, few things are better than sweet endings after a satisfying main course.
It can be as simple as chocolate cake and fruits – need I say more?
Chocolate Pudding Cake and Raspberry Sorbet
The chocolate cake was so good. Topped with crumbs and cream at the top and moist on the base, was a hit with both kids and adults alike.
A personal favourite however that we keep coming back for, however, is the Panna Cotta.

A traditional Panna Cotta, surrounded by strawberry basil compote. Milky and creamy with a touch of fruit.
Conversely, there are days when you want a less subtle sweet ending, and prefer a bigger and more kickass dessert.
For such days, I highly recommend the Biscoff Pizza.

OMG – the best kind of sugar rush this is. A pizza base, covered with caramelized banana, caramel sauce, crushed biscoff biscuits, and something like coffee praline balls – the sweet, buttery caramel really hits like a bomb.
(I really recommend this one with coffee for an awesome pairing).

Or, one can choose something bitter-sweet, the very classical Tiramisu.
Tiramisu is when layers of Espresso, Mascarpone cheese, and savoiardi (sponge fingers) come together in this gorgeous, creamy bitter-sweetness. Stereotypical Italian dessert.

Alternatively, try the Gelato. After all, buying ice cream is like buying happiness, and Prego has a wonderful selection of flavours.

Once, both my kids requested for ice cream, so we ordered a double scoop for them to share.

Our choice of Gelato flavour: cherry stracciatella and speculoos cookie. Served with a chocolate almond biscotti. Everything was smooth and creamy and cold and sweet all at once. Just the way it should be.
Here’s a pro-tip I can share: if celebrating a birthday or special event, TELL THE RESTAURANT. You never know what they will surprise you with. For my side, one of my visitations involved celebrating the mother-in-law’s birthday, and when the restaurant knew, they offered her a complimentary birthday cake.

All in all, Prego consistently serves good food, gave great service, and each visit always left us in a happier mood after. I always looked forward to coming here, and can highly recommend Prego for anyone’s visitation.
Complimentary Wine / Cake voucher
On the side, for holders of the American Express Platinum charge card, every year, upon payment of the card’s annual fees, one of the vouchers received would be this one: complimentary wine or cake from a participating restaurant in either Fairmont or Swissotel Singapore.

Cakes require a 2-day minimum advance order, however, wine can almost always be requested on the spot. The choices are either the in-house red wine or white one. The wine can either be served while dining, or diners can simply take the entire bottle home.
